After the process called nixtamalización, the grains are ground using a metate to make the tortilla dough. As the cook grinds the dough, she sets apart the portions at the edge of the metate. She then picks them with the batea, whose elongated shape fits very well on the inferior edge of the metate. This piece was made in Ixtlán by potter master Amelia (she’s more than 90 years old) who keeps tradition alive in this community hidden in the mountains of the Sierra Norte of Oaxaca.
